Personally, I rarely shoot in full manual. I have on occasion but I'm more apt to shoot in either aperture or shutter priority. Why? Well it depends on what it takes to meet the goal/intention of the shot. Am I trying to blur the background (bokeh) and focus on my subject? Am I trying to show my subject's movement such as a bike race with a blurred motion background? Etc.
From what I could see in your photographs, it looks like you have a eye for composition. I take it that you're familiar with the much talked about "rule of thirds"?
